hello all i'm having a fish fry mainly catfish and walleye, would like some input on different oils,breading etc want to try several new ones. i like cornmeal base lot of my friends like shore lunch, Andy's cajun is a good one also..........Any Thoughts?

I'm a big fan of crushing up a bag or 2 of pretzel rods as a breading.....

Actually.... I was in a bind once because we ran out of bradcrumbs.
I ended up using pancake batter and it was excellent!

The secret.... in my mind.... is this trick:
egg, flour(or whatever), and then once again in the egg before you drop it in the oil.

The once again in the egg makes a real nice presentations!

Crushed Waverly crackers is what I like for Lake Perch. Very light and doesn't take away from the fish. Use butter, not oil. You only live once. :winker

Got this one from StinkBait420.......Cover fillets in wet onion ring batter mix, let them set for a bit, then roll them in crushed corn flakes, then into the fryer. Peanut oil works great.
Also tried Gary Roach's batter up North this year. It was very light and tastey.

Ritz crackers are good, and a little sweet.
Panko Breadcrumbs are extra crunchy.
Dry pancake mix is very light, I like this one with bluegills.

They way I like to do breading is:

flour, shake off all excess
dip in egg/milk mix
dredge in breading (shake in a freezer bag)

this all can be done ahead of time, so when it's time to fry, it goes fast. I prefer to fry in peanut oil, just make sure no one there has an allergy. Otherwise, regular fry oil gets the job done.

Uncle Buck's sold in Wally world and other spots not just BPS don't get the hot unless you like it hot hot also try their hushpuppy mix.
